5-6 chicken thighs, skin on and bone in
2 tbsp olive oil
2 tbsp A Spice Affair’s Mediterranean Chicken Seasoning
1 lemon, juiced
2 cloves garlic, minced
½ cup chicken stock or white wine
1 ½ pint cherry tomatoes
½ cup pitted kalamata olives, mix of halved and whole
2-3 sprigs fresh thyme, or Dried Thyme
1 tbsp parsley, chopped for garnish, or Parsley Flakes
Lemon wedges for garnish
Himalayan Pink Salt and Black Pepper, to taste
- Preheat oven to 425F. Season chicken with 1 tbsp oil, lemon juice and Mediterranean chicken seasoning. Marinade 15 minutes-1 hour if rushed, or overnight.
- Heat the other 1 tbsp oil in skillet over medium-high heat. Sear chicken on both sides until golden brown (3-4 minutes per side). Remove from skillet and drain juices, leaving 1 tbsp liquid in pan.
- Add shallot and cook until softened (2-3 minutes). Add garlic and stir for 1 minute. Add half the tomatoes and chicken stock or wine and bring to boil. Add chicken back to skillet and bake in oven for 15 minutes. Add in the remaining tomatoes and thyme sprigs and bake another 15 minutes or until chicken is done. Add olives to skillet and broil for the last 5 minutes. Serve with parsley and lemon.
