1.5 tbsp olive oil
2 cups assorted tomatoes (cherry and Campari)
2 tsp A Spice Affair’s Bruschetta Seasoning
¼ tsp A Spice Affair’s Pink Himalayan Salt
¼ tsp A Spice Affair’s Dried Basil
1 cup grated mozzarella (or cheese preference)
1 sheet puff pastry
Fresh basil for garnish
1 egg, white only
1 tbsp honey (optional)


  1. Preheat oven to 400F and line baking tray with parchment paper. 
  2. Combine 1.5 tsp Bruschetta Seasoning and 1.5 tbsp olive oil and toss in a bowl with tomatoes. 
  3. Roll out the puff pastry. Spread grated cheese in centre of pastry leaving a 1 inch border. Sprinkle Dried Basil over cheese. Assemble tomatoes over cheese and sprinkle with Salt. 
  4. Brush egg white over the pastry edges. Fold the edges of the pastry inward and pinch together as you work around the tomatoes. Brush the egg white over the border. 
  5. Bake for 20-25 minutes until pastry is golden. Top with fresh basil. 
  6. Combine 1.5 Bruschetta Seasoning with honey and drizzle over tart before serving (if using honey).
