INGREDIENTS
1.5 tbsp olive oil
2 cups assorted tomatoes (cherry and Campari)
2 tsp A Spice Affair’s Bruschetta Seasoning (or Tuscan Infusion)
¼ tsp A Spice Affair’s Pink Himalayan Salt
¼ tsp A Spice Affair’s Dried Basil (or Italian Herbs)
1 cup grated mozzarella (or cheese preference; dairy or plant-based)
1 sheet puff pastry
Fresh basil for garnish
1 egg, white only
1 tbsp honey (optional)
PREPARATION
- Preheat oven to 400F and line baking tray with parchment paper.
- Combine 1.5 tsp Bruschetta Seasoning and 1.5 tbsp olive oil and toss in a bowl with tomatoes.
- Roll out the puff pastry. Spread grated cheese in centre of pastry leaving a 1 inch border. Sprinkle Dried Basil over cheese. Assemble tomatoes over cheese and sprinkle with Salt.
- Brush egg white over the pastry edges. Fold the edges of the pastry inward and pinch together as you work around the tomatoes. Brush the egg white over the border.
- Bake for 20-25 minutes until pastry is golden. Top with fresh basil.
- Combine 1.5 Bruschetta Seasoning with honey and drizzle over tart before serving (if using honey).
