INGREDIENTS
For the Chicken Marinade
- 1 lb chicken breast (whole)
- 1 cup Greek yogurt
- 1 tbsp Chili Crisp Oil Infusion & Seasoning A Spice Affair
- 2 tbsp Chef Deema’s Shish Tawook Spices
- 1 tbsp garlic powder
- 1 tbsp olive oil
- 1 tsp tomato paste
- 1 tbsp thyme
- Juice of 1 lemon
- Salt and pepper, to taste
For the Sandwich
- Pita bread
- Pickles, thinly sliced
- Garlic sauce
PREPARATION
1. Prepare the Chicken Marinade:
- In a mixing bowl, combine the Greek yogurt, A Spice Affair’s Chili Crisp, Chef Deema’s Shish Tawook blend, garlic powder, olive oil, tomato paste, thyme, lemon juice, salt, and pepper. Stir until well mixed.
- Add the chicken breast, coating it thoroughly with the marinade. Cover and refrigerate for at least 1-2 hours (or ideally overnight for a richer flavor).
2. Cook the Chicken:
- Preheat a grill or pan over medium-high heat.
- Grill or pan-cook the marinated chicken breast for 5-7 minutes on each side until fully cooked with a nice char. Remove from heat and let it rest briefly.
- Slice the chicken into strips.
3. Assemble the Sandwich:
- Lay the pita bread flat and spread a generous layer of garlic sauce.
- Place the sliced chicken on top and add the pickles.
- Wrap or roll the pita, and if desired, toast it lightly for a warm, crispy finish.
