INGREDIENTS
Salad:
- 2 cups tricolour quinoa, rinsed and drained
- 3 cups water
- 1 tsp salt
- 2 cups grape tomatoes, halved
- 1/2 English cucumber, halved & diced
- 1/2 red onion, thinly sliced
- 1 cup kalamata olives, pitted & chopped
- 3/4 cup feta cheese
Dressing:
- 1.5 tsp Himalayan Pink Salt A Spice Affair
- 2 tbsp Tzatziki Dip & Sauce Seasoning A Spice Affair
- 1 tsp Ground Black Pepper A Spice Affair
- 2 tsp dried oregano
- 1/3 cup olive oil
- Juice from 2 lemons
- 2 tbsp balsamic vinegar
- 2 tbsp red wine vinegar
PREPARATION

Cook the Quinoa:
In a medium pot, add quinoa, water, and salt. Bring to a simmer over medium heat. Cover the pot and cook until the quinoa has absorbed all the water and is tender, about 10 minutes. Remove from heat, fluff with a fork, and let cool. -
Prepare the Salad:
In a large mixing bowl, combine the cooled quinoa, tomatoes, cucumber, red onion, kalamata olives, and feta cheese. -
Make the Dressing:
In a small bowl, whisk together pink salt, tzatziki seasoning, black pepper, oregano, olive oil, lemon juice, balsamic vinegar, and red wine vinegar until smooth. -
Combine and Serve:
Pour the dressing over the salad ingredients and toss until well combined. Serve immediately, or refrigerate for an hour to allow the flavors to meld. Enjoy your delicious, flavor-packed Mediterranean quinoa salad!
