EASY MEDITERRANEAN QUINOA SALAD

INGREDIENTS

Salad:

  • 2 cups tricolour quinoa, rinsed and drained
  • 3 cups water
  • 1 tsp salt
  • 2 cups grape tomatoes, halved
  • 1/2 English cucumber, halved & diced
  • 1/2 red onion, thinly sliced
  • 1 cup kalamata olives, pitted & chopped
  • 3/4 cup feta cheese

Dressing:

PREPARATION

  1. Cook the Quinoa:
    In a medium pot, add quinoa, water, and salt. Bring to a simmer over medium heat. Cover the pot and cook until the quinoa has absorbed all the water and is tender, about 10 minutes. Remove from heat, fluff with a fork, and let cool.

  2. Prepare the Salad:
    In a large mixing bowl, combine the cooled quinoa, tomatoes, cucumber, red onion, kalamata olives, and feta cheese.

  3. Make the Dressing:
    In a small bowl, whisk together pink salt, tzatziki seasoning, black pepper, oregano, olive oil, lemon juice, balsamic vinegar, and red wine vinegar until smooth.

  4. Combine and Serve:
    Pour the dressing over the salad ingredients and toss until well combined. Serve immediately, or refrigerate for an hour to allow the flavors to meld. Enjoy your delicious, flavor-packed Mediterranean quinoa salad!
