INGREDIENTS
For the Dressing
- 6 tbsp extra virgin olive oil
- 1 1/2 tbsp fresh lemon juice
- 1 tbsp red wine vinegar
- 1 clove garlic, minced
- 1 tbsp A Spice Affair Mediterranean Salad Seasoning or Greek Herbs
- 1 tsp honey
- Pink Himalayan Salt, to taste
For the Salad
- 1 cup cherry tomatoes, cut in half
- 1 medium cucumber, sliced into half moons
- 1/2 small red onion, thinly sliced
- 1 small red pepper, sliced or diced
- 3/4 cup kalamata olives, optionally sliced
- 1 block feta or 1 cup crumbled feta cheese (or vegan feta)
- 1 cup lettuce or spinach (optional)
- 1 medium avocado, diced (optional)
PREPARATION
- In a small bowl, mix all dressing ingredients together.
- Place block of feta in the middle of a large plate and scatter the salad ingredients around it or use crumbled feta and gently mix the ingredients. Drizzle with dressing and serve!
