MEDITERRANEAN SALAD

INGREDIENTS
For the Dressing

For the Salad

  • 1 cup cherry tomatoes, cut in half
  • 1 medium cucumber, sliced into half moons
  • 1/2 small red onion, thinly sliced
  • 1 small red pepper, sliced or diced
  • 3/4 cup kalamata olives, optionally sliced
  • 1 block feta or 1 cup crumbled feta cheese (or vegan feta)
  • 1 cup lettuce or spinach (optional)
  • 1 medium avocado, diced (optional)
     

PREPARATION

  1. In a small bowl, mix all dressing ingredients together.
  2. Place block of feta in the middle of a large plate and scatter the salad ingredients around it or use crumbled feta and gently mix the ingredients. Drizzle with dressing and serve!
