A flavorful, one-pan roasted chicken that’s perfect for a cozy dinner. This spatchcock chicken is packed with rich citrus and herb flavors, balanced with tender roasted veggies!

INGREDIENTS
1 whole chicken, spatchcocked
3/4 cup unsalted butter, room temp
2 tbsp Honey, Orange & Rosemary Seasoning A Spice Affair
1 tsp Himalayan Pink Salt A Spice Affair
1 tsp Black Pepper A Spice Affair
3 carrots, peeled & cut
8 white potatoes, peeled & halved
1 tbsp Honey, Orange & Rosemary Seasoning A Spice Affair
1 tsp Himalayan Pink Salt A Spice Affair
1/2 tsp Black Pepper A Spice Affair
3 tbsp olive oil
Combine vegetables with oil & seasonings.
1 head garlic, tops removed
1 red onion, thickly sliced
Orange slices
Fresh rosemary sprigs
PREPARATION
In a bowl, combine butter with seasonings and set aside. Peel skin away from the chicken and spread 3/4 of the butter between chicken & skin. Spread remaining butter over. Place in a skillet. Arrange carrots, potatoes and onions around the chicken. Add garlic and drizzle with olive oil. Place Rosemary & orange slices over chicken.
Cover with foil and bake at 425F for 45 minutes. Remove foil & continue baking at 375F for 25 minutes or until internal temp reaches 165F.
