CHILI LIME CHICKEN WINGS

Recipe by Samuel Joubert – Le Coup de Grâce
Time: 55 min
Servings: 3-4 

INGREDIENTS

1 kg whole chicken wings, separated
The juice of 2 limes
2 large garlic cloves, roughly chopped
1 bunch coriander + a little for serving
60 ml (¼ cup) light blonde beer
60 ml (¼ cup) olive oil
2 tbsp honey
2 tbsp Chili Lime Seasoning
Freshly Himalayan Pink Salt and Black Pepper Ground

    PREPARATION

    1. Preheat the oven to 425F. Line a large baking sheet with parchment paper and scatter the chicken wings over it
    2. In a food processor, put the rest of the ingredients, add salt and pepper generously and purée until smooth
    3. Brush the chicken wings with the marinade and place in the oven. Bake for about 45 minutes or until the wings are golden brown. Brush regularly with the marinade and turn over halfway through cooking! Do not brush the last 10 minutes to avoid cross contamination
    4. Serve on a large plate and garnish with fresh cilantro!
