ONE POT CAJUN SHRIMP & RICE

INGREDIENTS

1 ⅓ cups uncooked long grain white rice (or 10 cups riced cauliflower)
⅔ cup chicken broth (only if using long grain white rice)
500g large or jumbo shrimp, peeled and de-veined
4 tbsp melted butter, divided
1 tsp minced garlic
2 tbsp A Spice Affair’s Cajun Seasoning 
Parsley, roughly chopped (for garnish)
  

PREPARATION

  1. In a large skillet over medium heat, melt 2 tablespoons butter. Add in the garlic, 1 tablespoon Cajun Seasoning, rice and stir until well combined.

  2. For the long grain white rice:
    Pour the chicken broth over the rice and bring to a boil. Reduce the heat, cover the rice and let simmer for about 10 to 15 minutes stirring occasionally.

    For the cauliflower rice:

    Cook for about 3 minutes, stirring occasionally until the cauliflower rice is soft.

  3. Meanwhile, season the shrimp with the remaining butter and 1 tablespoon Cajun Seasoning. Toss to evenly coat.

  4. Add seasoned shrimp to the rice, cover skillet and cook for another 5 minutes or until the shrimp is pink. Serve hot in a plate and garnish with chopped parsley.
