INGREDIENTS
For the Chicken
450 g chicken thighs, skinless (1lb)
3 tbsp olive oil
1 tbsp A Spice Affair’s Sumac
½ tsp A Spice Affair’s Cinnamon
¼ tsp A Spice Affair’s Black Pepper
1 tsp A Spice Affair’s Himalayan Pink Salt
1 tsp A Spice Affair’s Sweet Paprika
For the bowl
Hummus
Wild Rice
Cucumbers
Parsley
Feta
Sautéed onions (in olive oil, salt and sumac)
Olives
Roasted Pine nuts
Olive oil, for drizzling
Naan or Pita Bread (to serve, optional)
Lemon (to serve)
PREPARATION
- Pre-heat oven to 425F and line baking tray.
- Mix all chicken ingredients and pour spice mixture over chicken. Marinate for 1 hour. Place chicken on baking tray and bake for 30 minutes or until cooked. Broil last 5 minutes.
- Assemble bowl with hummus, chicken, wild rice, cucumbers, parsley, feta, sautéed onions, olives and roasted pine nuts. Drizzle with olive oil and enjoy!
