GARLIC MAGIC BUTTERFLY LOBSTER TAILS

GARLIC MAGIC BUTTERFLY LOBSTER TAILS

INGREDIENTS
4 frozen or fresh lobster tails
1 1/2 tbsp olive oil
1 1/2 tbsp fresh lemon juice
1 tsp Dijon mustard
2 tbsp of Garlic Magic Seasoning
8 tbsp salted butter
1 tbsp fresh parsley, very finely chopped

HOW TO PREPARE: 
• If the lobster tails are frozen, submerge them in cold water for about 20 minutes and prepare your ingredients until they thaw and pat dry with paper towel before marinating. If you find fresh lobster tails, skip this step.
• Start by flipping the lobster tail over with the back side up, and take a knife lined down the center and crack the ribs. This will help you pull the meat out much easier. Be careful as this side has thorn like parts that can hurt the hands.
• Next, use kitchen scissors to cut through the top shell of the lobster tail, stopping at the base of the tail as seen in the video.
• Open the shell, carefully loosen meat from the shell on each side. Lift the meat from the shell, keeping it attached at the base. Press the shell together and set the lobster meat over the top. Clean off any veins or dirty meat if necessary.

DIRECTIONS

  1. Preheat your oven to broil 550 (289℃)
  2. Prepare your marinade in a small bowl until well combined.
  3. Marinate your tails and set a piece of 1 tbsp of butter on each tail. Place them on a roasting dish, with the meaty tops of your lobster tails facing the top of the oven.
  4. Broil lobster tails on broil for 10 mins (the lobster tail should be bright red and the lobster meat should be opaque and white in the center and register 145˚F on an instant read thermometer.)
  5. Transfer to serving platter and garnish with parsley and more melted butter.
