1 ¾ cup flour
½ cup vegetable oil
1 ½ cups pumpkin purée
¼ cup milk, room temperature
½ cup brown sugar
2 eggs, room temperature
1 tsp baking soda
3 tsp A Spice Affair’s Pumpkin Spice
½ tsp salt
- Preheat oven to 425F and line muffin pan with cupcake liners. Set aside.
- In a large bowl, combine flour, baking soda, Pumpkin Spice, and salt together. Set aside.
- In a medium bowl, whisk the oil, granulated sugar, brown sugar, pumpkin puree, eggs and milk together until combined. Pour wet ingredients into dry ingredients, and fold gently until just combined. Spoon the batter into liners until almost full. Top with pepitas if using.
- Bake 5 minutes then reduce the oven temperature to 350F. Bake for an additional 15 minutes or until a toothpick comes out clean.
