Pumpkin cream cheese muffins are perfectly spiced & topped with a sweet cream cheese. đ They make a great snack option for lunch boxes and a perfect pairing for your morning latte! Hereâs what youâll need:
INGREDIENTS
1 1/2 cups flour
1 tbsp Pumpkin Spice A Spice Affair
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup pumpkin purĂŠe
1/2 cup white sugar
1/4 cup brown sugar
2 large eggs
1/2 cup vegetable oil
1/4 cup milk
1 tsp vanilla extract
For cream cheese, mix the following:
6 oz softened cream cheese
1/4 cup sugar
1 tsp vanilla extract
PREPARATION
Preheat the oven to 350ÂşF & line muffin tin with liners.
In a bowl, whisk together flour, spices, baking powder, baking soda and salt.
In a large bowl, mix pumpkin, sugars, oil, milk, eggs, and vanilla, and whisk until smooth.
Slowly add dry ingredients to the pumpkin mixture, stir until just combined.
Fill each liner 3/4 way with batter. Pipe cream cheese in the centre of the muffin.
Bake muffins for 22-24 minutes, or until a toothpick inserted in the middle comes out clean with just a few crumbs. Allow to cool for at least 10 minutes in the pan. Transfer to a wire rack to cool completely.
