It’s Crock-tober, the season for cozy meals made easy, and we’re shining the spotlight on Ambassador Haley Croften-Sleigh for her bold and flavour-packed creation:
🌮 Pulled Chicken Fajita Rice Bowls!
This vibrant recipe is bursting with Tex-Mex flavour and features some of Haley’s favourite A Spice Affair and The Spice Age blends: Taco, Let’s Taco ’Bout It, Garlic Magic, Parsallot, Fajita, and Guacamole.
It’s a total weeknight winner, full of colour, easy to make, and loaded with flavour!
Pulled Chicken Fajita Rice Bowls
Ingredients for Pulled Chicken:
• 3 frozen chicken breasts (or 12 chicken fillets)
• ¼ cup ketchup
• 2 tbsp A Spice Affair Taco
• 2 tbsp The Spice Age Let’s Taco ’Bout It
• 1 tbsp A Spice Affair Garlic Magic
• 1 tbsp A Spice Affair Parsallot
• 1 tbsp A Spice Affair Fajita
For the Rice:
• 2 cups rice (Haley used jasmine)
• ¼ cup olive oil
• 2 tbsp A Spice Affair Guacamole
Toppings:
Sliced bell peppers, chopped onions, diced avocado, cheddar cheese, and salsa.
Instructions:
1️⃣ Cook the Chicken:
Place frozen chicken in crockpot. Add ketchup and all seasonings.
Cook on High 4 hours or until chicken is tender. Shred with two forks.
2️⃣ Prepare the Rice:
Cook rice according to package directions. Stir in olive oil and Guacamole seasoning.
3️⃣ Prep the Veggies:
Chop peppers, onions, and avocado.
4️⃣ Assemble Your Bowl:
Layer rice, pulled chicken, veggies, cheddar cheese, and salsa.
5️⃣ Enjoy!
