Ingredients
Roasted carrots
- 3–4 large ones, halved lengthwise (or 6 to 8 small carrots)
- 1–2 tbsp olive oil
- 1–2 tbsp Maple Chipotle Seasoning - The Spice Age
- 1 tbsp maple syrup (optional, for extra sweetness)
- Salt, to taste
Tofu cream sauce
- 300 g (about 10 oz) silken tofu
- 1 tbsp lemon juice
- 1 garlic clove (or half, if you prefer it milder)
- 1 tbsp Dijon mustard
- 1 tbsp nutritional yeast (optional, for a cheesy flavour boost)
- 1 tbsp olive oil (optional, for extra creaminess)
- Salt and pepper, to taste
To finish: Chopped roasted peanuts or cashews (because everything’s better with a little crunch)
Preparation
Roasted Carrots
- Preheat oven to 400°F (200°C).
- Toss carrots with olive oil, Maple Chipotle Seasoning - The Spice Age, maple syrup (if using), and a pinch of salt.
- Arrange on a baking sheet and roast for 25–30 minutes, or until tender and slightly caramelized.
Tofu Cream Sauce
- In a blender or food processor, combine silken tofu, lemon juice, garlic, Dijon mustard, nutritional yeast, olive oil, salt, and pepper.
- Blend until smooth and creamy. Taste and adjust seasoning as needed.
Assemble
- Spoon a generous layer of tofu cream onto a plate. Top with roasted carrots and sprinkle with chopped nuts.
