Maple Roasted Carrots & Creamy Tofu

Ingredients

Roasted carrots

  • 3–4 large ones, halved lengthwise (or 6 to 8 small carrots)
  • 1–2 tbsp olive oil
  • 1–2 tbsp Maple Chipotle Seasoning - The Spice Age
  • 1 tbsp maple syrup (optional, for extra sweetness)
  • Salt, to taste

Tofu cream sauce

  • 300 g (about 10 oz) silken tofu
  • 1 tbsp lemon juice
  • 1 garlic clove (or half, if you prefer it milder)
  • 1 tbsp Dijon mustard
  • 1 tbsp nutritional yeast (optional, for a cheesy flavour boost)
  • 1 tbsp olive oil (optional, for extra creaminess)
  • Salt and pepper, to taste

To finish: Chopped roasted peanuts or cashews (because everything’s better with a little crunch)

Preparation

Roasted Carrots

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots with olive oil, Maple Chipotle Seasoning - The Spice Age, maple syrup (if using), and a pinch of salt.
  3. Arrange on a baking sheet and roast for 25–30 minutes, or until tender and slightly caramelized.

Tofu Cream Sauce

  1. In a blender or food processor, combine silken tofu, lemon juice, garlic, Dijon mustard, nutritional yeast, olive oil, salt, and pepper.
  2. Blend until smooth and creamy. Taste and adjust seasoning as needed.

Assemble

  1. Spoon a generous layer of tofu cream onto a plate. Top with roasted carrots and sprinkle with chopped nuts.
  2. Serve warm and feel fancy—this is not your average carrot dish.
