LEMON POPPY SEED LOAF

INGREDIENTS

For the Loaf
1 ¾ cups unbleached all-purpose flour

1 tbsp A Spice Affair’s Poppy Seeds
2 tsp baking powder
½ cup unsalted butter, softened
1 ¼ cups sugar
3 lemons, zest finely grated (keep 1 tsp for garnish)
3 eggs
½ cup lemon juice
¼ cup milk

For the Glaze (Optional)
1 cup icing sugar

2 tbsp lemon juice


PREPARATION

For the Loaf

  1. Place the rack in the middle and preheat oven to 350°F (180°C). Grease a loaf pan with butter then line with parchment paper letting it come out from both sides.
  2. In a bowl, mix the flour, baking powder and Poppy Seeds.
  3. In a separate bowl, mix the butter, sugar and lemon zest with a cake mixer. Add in the eggs and beat mixture until smooth. Slowly add the dry ingredients followed by the lemon juice and milk, continue beating until smooth. Transfer batter to the loaf pan.
  4. Bake for 50-60 minutes or until done. Poke with toothpick or knife, there shouldn’t be any batter sticking onto the toothpick. Take out the loaf and set aside to cool.

For the Glaze (Optional)

  1. Whisk glaze ingredients together in a bowl until smooth.
  2. Transfer cake loaf to a serving plate, drizzle with glaze and garnish with lemon zest.
