Ingredients
For the chicken

600 to 800 g boneless chicken thighs (or breasts, thighs are juicier)

2 to 3 tbsp Shawarma Chicken Spices A Spice Affair

2 tbsp olive oil

2 tbsp lemon juice
-
Salt to taste
For the sandwich

4 pita breads or flatbreads
-
Lettuce, sliced tomatoes, thinly sliced red onions
For the garlic yogurt sauce
-
½ cup plain yogurt
-
1 tbsp lemon juice
-
1 garlic clove, grated
-
Salt, pepper, chopped parsley or mint to taste
Preparation
1. Marinate the chicken
In a bowl, mix olive oil, lemon juice, and Shawarma Chicken Spices A Spice Affair. Add chicken pieces, coat well, and marinate at least 1 hour (overnight in fridge recommended).
2. Cook the chicken
Preheat BBQ, skillet, or oven to 200°C (400°F).

BBQ/skillet: Grill chicken 5–7 minutes per side until golden and cooked through.

Oven: Bake 20–25 minutes on a lined tray, then broil 2–3 minutes to caramelize.
3. Prepare the garlic yogurt sauce
Mix yogurt, lemon juice, grated garlic, salt, pepper, and herbs. Set aside.
4. Slice and assemble
Cut chicken into thin strips like traditional shawarma. Warm pita breads. Fill with lettuce, tomato, onions, chicken, and garlic yogurt sauce. Roll and serve warm.
