Ingredients
For the roasted potatoes

1 kg small baby potatoes (red or yellow)

2 to 3 tbsp olive oil

1 to 2 tbsp Garlic Magic Seasoning A Spice Affair

Salt and pepper, to taste
For the dressing & salad

¼ cup mayonnaise (or Greek yogurt for a lighter version)

1 tbsp Dijon mustard

1 tbsp lemon juice
-
3 to 4 radishes, thinly sliced

2 tbsp chopped green onions
-
2 tbsp chopped fresh parsley or dill
Preparation
1. Roast the potatoes
Preheat the oven to 400°F (200°C). Cut the potatoes in half or quarters depending on size. Toss them on a baking sheet with olive oil, Garlic Magic Seasoning A Spice Affair, salt, and pepper. Roast for 25-30 minutes until tender and golden. Let cool slightly.
2. Prepare the dressing and combine
In a large bowl, whisk together mayonnaise, Dijon mustard, and lemon juice. Add the roasted potatoes and toss to coat. Stir in radishes, green onions, and half of the herbs. Adjust seasoning with salt and pepper.
3. Serve
Serve warm or cold, garnished with remaining fresh herbs.
