Easy Mediterranean quinoa salad that’s bursting with flavour ❤️ here’s what you’ll need:
INGREDIENTS
2 cups tricolour quinoa, rinsed and drained
3 cups water
1 tsp salt
2 cups grape tomatoes, halved
1/2 English cucumber, halved & diced
1/2 red onion, thinly sliced
1 cup kalamata olives, pitted & chopped
3/4 cup feta cheese
Dressing
1.5 tsp Himalayan Pink Salt A Spice Affair
2 tbsp Tzatziki Dip & Sauce Seasoning A Spice Affair
1 tsp Black Pepper Ground A Spice Affair
2 tsp Dried Oregano A Spice Affair
1/3 cup olive oil
Juice from 2 lemons
2 tbsp each balsamic & red wine vinegar
PREPARATION
Add quinoa to a pot, add cold water and salt, and bring to a simmer on medium heat. Cover and leave to cook until quinoa has absorbed all the water and is cooked through (approx 10 minutes). Fluff with a fork and leave to cool.
Once cooled, combine quinoa with tomatoes, cucumber, onion, feta & olives. Add dressing ingredients and toss until combined.
