2 tbsp vegetable oil
1 onion, finely chopped
2 cloves of garlic, minced
1 cup bell pepper, chopped
1 cup green chili pepper, chopped
2 cups corn
1 tbsp Chef Deema’s Everything Mexican Spices [Chef Deema’s Kitchen Essential Spices 12-pack]
1 tsp A Spice Affair’s Smoked Paprika
1 tsp A Spice Affair’s Oregano
Salt and Pepper
1-4 cups pickled jalapeños
200 g cream cheese
1-4 cups cream
1-4 cups green onions, chopped
1-4 cups green coriander, chopped
1 cup cheddar and monterey jack cheese
1. In a saucepan, heat 2 tablespoons vegetable oil over medium heat and sauté the onions. Add the garlic, bell pepper, green chili pepper and stir.
- Add the corn, Everything Mexican Spices, Smoked Paprika, Oregano, Salt, Pepper, jalapeno, and cook until the onions are translucent. Add the cream cheese in the centre, followed by cream, green onions, coriander, and mix.
- Preheat oven to 350F. Transfer the mixture to a baking dish, top with cheddar and Monterey jack cheese and bake for 10 minutes. Serve with tortilla chips or toasted tortilla bread and enjoy!
