Ingredients
- 500 g chicken (breast or thigh), cubed
- 2 tbsp Butter Chicken Seasoning A Spice Affair
- 1 sliced onion
- 200 ml heavy cream 35% (or coconut milk for dairy-free)
- 200 ml tomato pulp (or crushed tomatoes)
- 1 tbsp butter (or ghee)
- Salt, to taste
- Basmati rice or naan, to serve
Preparation
1. Prepare the base
In a bowl, mix the chicken with 2–3 tbsp of cream (or coconut milk) and 1 tbsp Butter Chicken Seasoning A Spice Affair. Set aside. Meanwhile, melt the butter in a large skillet and sauté the sliced onion until soft and golden.
2. Cook the chicken
Add the marinated chicken to the skillet with the onions and sear over medium heat. Sprinkle in a bit more seasoning to enhance the flavour.
3. Finish the sauce and serve
Pour in the tomato pulp and remaining cream (or coconut milk). Stir well and let simmer on low heat for 10–15 minutes until the sauce thickens slightly. Adjust seasoning to taste. Serve hot with basmati rice or naan bread.
