BRUSCHETTA CHICKEN WITH PARMESAN

BRUSCHETTA CHICKEN WITH PARMESAN

An adaptation of Karina’s recipe from Café Delites
Time: 25 minutes
Servings:  4

INGREDIENTS

Chicken

Garnish

  • 4 Roma tomatoes, finely chopped
  • 1 tbsp Bruschetta Dip Mix
  • 2 tbsp olive oil
  • ½ cup freshly shaved Parmesan cheese
Balsamic Glaze (optional)
  • 1/2 cup balsamic vinegar
  • 2 teaspoons brown sugar 

INSTRUCTIONS

  1. Season chicken with Italian Herbs, garlic and Himalayan Pink Salt. Cook over medium-high heat for 1 minute each side to sear the chicken. Continue cooking for about 6 minutes each side. Set aside and let it rest

  2. Soak Bruschetta seasoning in olive oil for 5-10 minutes. Add more Bruschetta Dip Mix for a richer taste. Combine with tomatoes in a bowl. Garnish each chicken breast with the mixture and Parmesan cheese

  3. Balsamic Glaze (optional): mix the vinegar with brown sugar in a saucepan and bring to a boil. Let it simmer for 6 minutes on low heat or until the sauce has thickened

  4.  Serve with a side of green salad or garlic bread (optional)
