INGREDIENTS
- 2 avocados
- 2 tbsp A Spice Affair Tuscan Herbs, Italian Herbs or Bruschetta Seasoning
- 1/2 tsp Himalayan Pink Salt
- 1/2 tsp Black Pepper Ground
- ½ cup spinach or baby arugula, roughly chopped
- ¼ cup fresh basil, roughly chopped
- 4 slices of toast (multigrain, keto or gluten-free)
Toppings
- 8 mini bocconcini cheese balls halved or 4 tbsp ricotta cheese
- 8-10 cherry tomatoes, halved
- Balsamic glaze
- A Spice Affair's Tuscan Herbs, Italian Herbs or Bruschetta Seasoning, for garnish
PREPARATION
- Mash the avocado in a bowl. Add 2 tablespoons A Spice Affair's Tuscan Herbs, salt and pepper and stir with a fork until combined
- Roughly chop the spinach and basil, then add to the avocado bowl and mix to combine
- Toast 4 slices of bread
- Spread 1/4 avocado mixture on each toast. With the help of a fork, top with crumbles of ricotta cheese or bocconcini balls, cherry tomatoes and drizzle with balsamic glaze. Sprinkle with A Spice Affair Italian Herbs and enjoy!
