AVO-TOAST WITH ITALIAN HERBS, BOCCONCINI & BALSAMIC GLAZE

INGREDIENTS

Toppings

  • 8 mini bocconcini cheese balls halved or 4 tbsp ricotta cheese
  • 8-10 cherry tomatoes, halved
  • Balsamic glaze
  • A Spice Affair Italian Herbs or Bruschetta Seasoning, for garnish

 

PREPARATION

  1. Mash the avocado in a bowl. Add 2 tablespoons Italian Herbs or Bruschetta Seasoning, salt and pepper and stir with a fork until combined
  2. Roughly chop the spinach and basil, then add to the avocado bowl and mix to combine
  3. Toast 4 slices of bread
  4. Spread 1/4 avocado mixture on each toast. With the help of a fork, top with crumbles of ricotta cheese or bocconcini balls, cherry tomatoes and drizzle with balsamic glaze. Sprinkle with A Spice Affair Italian Herbs and enjoy!
