Ingredients
- 1- 12 oz can beer
- 3 - 4 lb whole roasting chicken
- 2 Tbsp (30 mL) olive oil, divided
- 1 Tbsp (15 mL) Island Gurl Seasoning Salt
- 2 Tbsp (30 mL) Island Gurl BBQ Rub
- 2 lb. small colourful potatoes, rinsed
- 1 Tbsp (15 mL) A Spice Affair Honey Orange Rosemary Seasoning
- Salt and pepper to taste
- 1 beer can chicken stand (optional)
Directions:
1. Preheat the grill or smoker to 245°F (118°C). Remove and discard any giblets inside the chicken, rinse and pat dry with paper towel.
2. Place the chicken on a large cutting board, drizzle with 1 Tbsp of oil, season all sides and inside cavity with seasoning salt, then generously rub the BBQ rub all over the chicken.
3. If you don’t have a beer can chicken stand, place the beer can in the middle of a baking dish. Nestle the chicken over the can, holding the body and legs to steady it. Fold the wing tips back behind the breast.
4. Add potatoes to a large bowl, drizzle remaining oil around the potatoes, add seasoning, salt and pepper if using and toss to coat. Add potatoes to the pan assembled around the chicken to catch the juices.
5. Transfer the chicken to the smoker for about 2 hours until juices runs clear when pierced with a fork, or until an instant-read thermometer inserted into the thickest part of the meat registers 165˚F (74˚C). Allow chicken to rest for 8–10 minutes before cutting into quarter pieces and serving.
