INGREDIENTS

For the Gnocchi:

  • 500 g potato gnocchi
  • 150 g pancetta, diced
  • 1 tablespoon olive oil
  • 2 tablespoons Roasted Garlic & Sun-Dried Tomato Seasoning A Spice Affair
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh baby spinach
  • Salt and black pepper, to taste

For Garnish:

  • Fresh basil
  • Freshly grated Parmesan cheese

PREPARATION

1. Cook the pancetta

Heat a large skillet over medium heat. Add the pancetta and cook until golden and crispy. Transfer to a plate and set aside, leaving a little of the rendered fat in the skillet.

2. Cook the gnocchi

Cook the gnocchi according to package directions. Drain and set aside.

3. Prepare the Marry Me sauce

Add the olive oil, sun-dried tomatoes, and Roasted Garlic & Sun-Dried Tomato Seasoning A Spice Affair to the skillet. Cook for about 1 minute to release the flavours.

Pour in the cream and broth. Stir well and bring to a gentle simmer.

4. Make it creamy

Add the Parmesan and stir until melted and the sauce is smooth and creamy. Add the spinach and cook until just wilted.

5. Add the gnocchi

Add the cooked gnocchi to the skillet and gently toss until completely coated in the creamy sauce. Simmer for 2 to 3 minutes, or until the sauce has thickened slightly. Season with salt and black pepper to taste.

6. Finish and serve

Divide the gnocchi between bowls and top with the crispy pancetta, fresh basil, and extra Parmesan. Serve immediately and enjoy!
