KOREAN SHRIMP LETTUCE WRAPS

Prep time: 15 min Cook time: 5-6 min + 1hr for the marinade 
Servings: 8 wraps


INGREDIENTS
For the Shrimp
16 jumbo black tiger shrimps, cleaned & deveined, tail on
1/4 cup low sodium soy sauce
3 tbsp honey
1 tbsp A Spice Affair’s Korean BBQ Seasoning
1/2 tbsp sesame oil
1/2 lemon juiced
2 cloves garlic, minced


For the Lettuce Wraps
8-16 Boston lettuce leaves
3 mangoes, diced
1 handful red cabbage, sliced
1 carrot, spiralized 
Peanut Sauce or sauce of preference
Sesame Seeds (optional)
Microgreens for garnish (optional)


DIRECTIONS

  1. Combine the marinade ingredients in a large bowl. Coat the shrimp and marinade for at least one hour or overnight in the fridge. 
  2. Grill the shrimp for 5-6 minutes or until cooked, flipping once. 
  3. Lay the Boston lettuce leaf/leaves on a plate. Top with red cabbage, carrots and mango. Place shrimp on top, drizzle with your choice of sauce and sprinkle with sesame seeds (optional). Add microgreens for garnish (optional).
