AVOCADO EGG SALAD BRUNCH

INGREDIENTS
1 large avocado or 2 medium
3 eggs 
1 tbsp A Spice Affair’s Guacamole Seasoning
2 tbsp Greek yogurt or light mayonnaise
1-2 tbsp lemon juice (optional)
Salt, to taste
Microgreens (optional)


PREPARATION

  1. In a medium pot, bring water to a boil. Cook eggs for 12 minutes. Set aside and cool.
  2. In a medium bowl, mash avocado until creamy. Add yogurt or mayo, lemon juice if using and 1 tbsp Guacamole Seasoning. 
  3. Dice eggs and gently fold into mixture. 
  4. Spread on slices of toast and garnish with toppings of preference. 

PRO TIP, you may have fun with various Topping combinations:
A Spice Affair’s Everything Bagel Seasoning (with 1 boiled egg - shredded)
A Spice Affair’s Vegan Bacon Seasoning (with tomatoes)
