I come from the brown bark of the cinnamon tree, which, when dried, rolls into a tubular shape. I am a chopped version of cinnamon, which allows me to release more of my spicy notes: the cinnamon pieces are much more full-bodied and sharper. I can be used as an infusion to enhance your sweet or salty dishes: roast chicken, desserts and marinades and I add character to your hot drinks like mulled wine.
