My granules come from the Poblano pepper: a pepper full of flavor and particularly delicate. When tasted, I am said to be slightly chocolatey, with delicate fruity notes of prunes, dates and raisins. As I ripen and dry, I become flat and crumpled into a heart shape, and then turned into granules. I am often used in Mexican cuisine, especially for the famous Chile relleno or Chile en nogada, the Mexican national dish. I am also chosen for salsas, moles or adobos.
