Ingredients
For the patties:
(makes about 8 patties)

2 medium zucchinis, grated (or finely chopped broccoli)

2 eggs

80 g grated cheese (Parmesan or mozzarella)

50 g breadcrumbs (or almond flour for gluten-free)

1 garlic clove, grated (optional)

Salt and pepper, to taste

Oil for cooking
For the dip:

3 tbsp Greek yogurt or fromage blanc

1 tbsp mayonnaise

A squeeze of lemon juice

Salt and pepper, to taste
Preparation
Step 1: Prepare the patties
Grate the zucchinis and squeeze out excess water using a clean kitchen towel. In a large bowl, mix the drained zucchini with eggs, cheese, breadcrumbs, garlic, The Saucy Green Goddess Seasoning - The Spice Age, salt, and pepper. Shape the mixture into small, flat patties.
Step 2: Cook the patties
Heat oil in a frying pan over medium heat. Cook the patties for 3–4 minutes on each side until golden brown.
Step 3: Make the dip and serve
In a small bowl, combine all the dip ingredients and let sit for 10 minutes to develop flavours. Serve the patties hot with the Green Goddess dip. Optionally, sprinkle with grated cheese for garnish.
