Ingredients

  • 500 g boneless chicken, cubed
  • 2 tbsp Curry Madras A Spice Affair
  • 2 garlic cloves, minced
  • 1 tbsp freshly grated ginger
  • 1 onion, thinly sliced
  • 400 ml coconut milk
  • 1 tbsp neutral oil
  • Salt, to taste
  • Fresh cilantro, for garnish
  • Basmati rice, for serving

Preparation

1. Marinate & cook aromatics

Toss the chicken with the Curry Madras A Spice Affair and let marinate for 15 minutes (or up to 1 hour in fridge). Heat oil in a skillet, sauté garlic, ginger, and onion until soft.

2. Cook the chicken & simmer

Add marinated chicken, sear until lightly browned. Pour in coconut milk, season with salt, cover and simmer for 20 minutes on low heat.

3. Serve

Serve hot over basmati rice, garnished with fresh cilantro.
