EASY SHEET PAN THANKSGIVING DINNER

EASY SHEET PAN THANKSGIVING DINNER

Prep Time: 15 minutes, Cook Time: 50 minutes, Total Time: 1 hour 5 minutes

Serves 3-4 




INGREDIENTS

For the Turkey

2 turkey thighs, 2 turkey legs

1 ½ tbsp olive oil

1 tbsp A Spice Affair’s Turkey Rub Seasoning

2 tbsp butter, melted (for basting)

Salt and pepper to taste


For the Sheet pan

2 medium sweet potatoes, peeled and cubed

1 cup brussels sprouts, trimmed and halved

½ red onion, sliced

⅓ cup fresh cranberries

2 sprigs rosemary

1 tbsp A Spice Affair’s Potato Seasoning

1 ½ tbsp olive oil

Salt and pepper to taste



PREPARATION

  1. Preheat oven to 400F and place Turkey thighs and legs on lined baking tray.

  2. Combine 1.5 tbsp oil and Turkey Rub Seasoning. Spread over turkey pieces and roast for 15 minutes. 

  3. Combine potato seasoning and 1.5 tbsp oil and pour over cubed sweet potatoes. Mix to combine. 

  4. Remove sheet from oven and arrange sweet potato around turkey. Using the same mixing bowl as the sweet potato, toss in the halved brussels sprouts to coat with remaining seasoning. Arrange on baking tray with sweet potato and red onion and roast again for another 20 minutes. 

  5. Remove sheet pan from oven and add fresh cranberries and fresh rosemary. Using the melted butter, baste onto Turkey pieces, then return pan to oven and roast again for another 15 minutes or until turkey reaches a safe temperature. Remove from oven and cover with foil to let rest for 5-10 minutes.
