CHEESY POTATOES WITH VEGAN BACON

INGREDIENTS

  • 4 potatoes, sliced or cubed
  • 1/2 cup yellow onions, diced
  • 2-3 tbsp coconut oil (vegan) or butter (non-vegans)
  • 1 tsp Black Pepper Ground, to taste
  • 2 tbsp Everything Bacon Vegan Seasoning
  • 1-2 cups vegan cheese, grated (non-vegan options: Mozzarella, Cheddar, Fontina, Raclette and Provolone)
  • 2 tbsp Parsallot 

INSTRUCTIONS:

  1. Preheat oven to 400 degrees
  2. Chop the potatoes & yellow onions, then transfer to a pan
  3. Combine with pepper and oil and bake for 20-25 minutes. Stir the potatoes and bake for another 20-25 minutes. Bake more if needed, until golden brown. NOTE: Do not sprinkle salt as the bacon is salty
  4. Take out the potatoes and season generously with Everything Bacon Vegan Seasoning. Stir potatoes (if cubed) until they are evenly coated then top with cheese and return to oven for another 3 minutes. Garnish with Parsallot and serve

NOTE: Can use the same recipe replacing Bacon Seasoning with Bacon & Herbs.
