Brussels Sprouts Salad
INGREDIENTS
1.5 lbs fresh Brussels sprouts (shredded in food processor)
1 pear (I use red Anjou pears for mild, sweet flavor with smooth texture)
1 tsp lemon juice
1/3 cup dried cranberries
1 red onion sliced thin 
1/4 cup chopped walnuts
1 c chopped bacon (cooked) 
 
DRESSING
1/3 cup olive oil
3 Tbsp apple cider vinegar
1 Tbsp fresh lemon juice
2 Tbsp honey
1 1/2 tsp Dijon mustard
1/2 tsp garlic powder
S / P to taste
***If you don't have ingredients to make fresh, simply pick up a bottle of Honey Mustard Paleo-friendly dressing 
 
INSTRUCTIONS
1. You may use the Brussels Sprouts raw or roasted (I roasted the shredded sprouts with 1 Tbsp of EVOO & 1 Tbsp of "Jardiniere" seasoning at 400 for about 20 - 30 minutes)
2. Chop pear and toss with lemon juice to prevent browning.
3. Combine all remaining salad ingredients in a large salad bowl. Toss with dressing and serve.
