AVOCADO, HALLOUMI & HERBS SALAD

Time: 10 minutes
Servings: 2-3

INGREDIENTS

For the Fried Cheese

  • 1/2 cup Halloumi or Akkawi cheese, cut into cubes
  • 1 tbsp extra virgin olive oil
  • Sprinkle of A Spice Affair Red Hot Chili Flakes

For the Dressing

For the Salad

  • 3 cups spinach or mixed greens
  • 1/4 cup mint leaves
  • 1/2 cup cherry tomatoes, halved
  • 1 large avocado, sliced or cubed
  • 1 tbsp sunflower or pumpkin seeds (optional)

 

PREPARATION

  1. In a skillet, heat olive oil with a sprinkle of hot red chili flakes over medium heat
  2. Once hot, add the pieces of cheese and fry them for 2 minutes on each side or until browned, be careful from oil splashing towards you
  3. In a small bowl, mix the dressing ingredients until smooth
  4. In a large bowl, toss the salad and fried halloumi with the dressing
  5. Serve on a plate and enjoy!

 NOTE: you may also grill the halloumi for a lighter version.
