This curry tofu scramble is a great plant-based breakfast option. If you’re plant-based and struggle to find savory breakfast options, try this out! Having a savory breakfast is a great way to prevent glucose spikes, for stable energy and to avoid cravings throughout the day! I like to serve with some roasted sweet potatoes and avocado for a balanced meal including healthy protein, starches, fiber, and fat! It’s simple, full of flavor, and can be prepped ahead and reheated for a meal anytime of day!

This veggie dish is so packed with flavor and really easy to throw together! It’s loaded up with lots of spices and fresh herbs, which I love using to flavor my dishes, but also to add an extra layer of health benefits! This is packed with spices and herbs that contain antioxidants, anti-inflammatory properties, regulate blood sugar, and promote heart health! The tahini sauce is a great way to finish this dish or even used as a dressing for salads.
INGREDIENTS
For the Harissa Roasted Veggies
1 head of cauliflower chopped
7 carrots peeled and chopped
2 tbsp Avocado oil

It’s loaded with healthy fats and fiber to keep you full and it’s also a great way to get creative because you can customize flavors to whatever you like! This is essentially a delicious antipasto platter, but entirely plant based, topped over a bed of greens… YUM! There is so much flavor in this dish and the dressing is really what brings it all together. Homemade salad dressing is so easy to make and it’s much better than what’s available at the store, not just from a nutritional standpoint, but also for flavor! Mixing a few quality ingredients together and adding in some seasonings is really all it takes to make an amazing salad dressing. The tuscan herbs blend is full of flavor and health promoting herbs and spices and makes for the perfect addition to this dressing. This a great dish to serve as an appetizer, side salad, or as a plant based meal! It’s very simple and comes together in minutes. I truly believe healthy meals can and should be delicious, nutritious, and easy!

This is soooo grounding and delicious! I can’t believe I have never made this before… it’s so easy to make, but also feels really satisfying! I know it’s almost summer and curry may not feel like something that you want right now… but hear me out! I focus on gut health- and what you may not realize is that cold and raw foods are harder for our bodies to digest and can often cause discomfort if you struggle with a sensitive GI tract. So if you tend to reach for all the salads and smoothies as the weather starts to heat up, try to create a bit more balance by making sure to get in some warm, cooked foods as well. This dish is also loaded with gut friendly spices and herbs! Among many other health benefits, spices & herbs aid digestion, and soothe & strengthen the gut lining. So if you’re looking for something good for meal prep, a warming dish, or a meal to support your gut health- this is a fantastic meal!

Za’atar seasoning is my absolute favorite, it works in so many types of dishes! I love using it to season fish with just some EVOO and lemon, it’s such a simple and fresh combo that never disappoints.
